Hello
So were changing out the transmission on my 2012 impala LT. Do we need to do a relearn on this? If so, how is this done?

As far as I know, no.

I've changed two out on my son's 2002, one generation earlier, and all we did was plug in the connector (then re-connect the battery).

I agree with plano-doug, plug and play swap.
However make sure the final drive ratio is the same as the old trans. And the service manual states:
Note: It is recommended that the transmission adaptive pressure (TAP) information be reset. Resetting the TAP values using a scan tool will erase all learned values in all cells. As a result, the ECM, PCM or TCM will need to relearn TAP values. Transmission performance may be affected as new TAP values are learned.
